Lemon Butter Scallops

Tender scallops seared to perfection and finished with a zesty lemon butter sauce, delivering a quick and elegant seafood dish that’s perfect for any occasion.

  • 12 large sea scallops
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juice and zest
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Pat scallops dry with paper towels and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Add scallops to the skillet, making sure not to overcrowd. Cook for about 2 minutes per side until golden brown and opaque throughout.
  4. Remove scallops from skillet and set aside on a plate.
  5. Reduce heat to medium, add butter to the same skillet.
  6. Once butter is melted, add minced garlic and cook for 30 seconds until fragrant.
  7. Stir in lemon juice and zest, then return scallops to the skillet, spooning the sauce over them.
  8. Cook for an additional minute to coat scallops; sprinkle with chopped parsley before serving.

Notes

For extra flavor, serve with a side of garlic mashed potatoes or steamed asparagus and garnish with additional lemon wedges.
