Lemon Blueberry Layer Cake

This Lemon Blueberry Layer Cake is a delightful combination of zesty lemon and fresh blueberries layered between moist cake layers, perfect for any dessert occasion.

  • 2 1/2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 1 tbsp lemon zest
  • 1/4 cup fresh lemon juice
  • 1 tsp vanilla extract
  • 1 cup whole milk
  • 1 1/2 cups fresh blueberries
  • For the Lemon Buttercream Frosting:
    • 1 cup unsalted butter, softened
    • 4 cups powdered sugar
    • 2 tbsp fresh lemon juice
    • 1 tsp lemon zest
    • 2-3 tbsp heavy cream
    • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the butter and sugar together until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Mix in lemon zest, lemon juice, and vanilla extract.
  5. Alternately add the dry ingredients and milk to the butter mixture, beginning and ending with dry ingredients. Mix until just combined.
  6. Gently fold in the blueberries, being careful not to break them.
  7. Divide the batter evenly among the prepared pans and smooth the tops.
  8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cakes to cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
  10. For the frosting, beat butter until creamy. Gradually add powdered sugar, lemon juice, lemon zest, salt, and enough heavy cream to reach desired consistency.
  11. Once cakes are cooled, frost the first layer, then stack the second cake on top. Repeat with remaining frosting and final cake layer.
  12. Decorate with extra blueberries or lemon zest if desired.

Notes

For an extra burst of flavor, chill the cake for an hour before serving to let the lemon and blueberry flavors meld beautifully.
