Irish Potato Soup with Cheddar & Bacon

This creamy Irish Potato Soup with Cheddar Bacon combines comforting potatoes and sharp cheddar with crispy bacon for a hearty and satisfying meal perfect for chilly days.

  • 4 large russet potatoes, peeled and diced
  • 4 slices bacon, chopped
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and freshly ground black pepper, to taste
  • 2 green onions, sliced (optional garnish)

Instructions

  1. In a large pot, cook chopped bacon over medium heat until crisp. Remove bacon with a slotted spoon and drain on paper towels, leaving bacon fat in the pot.
  2. Add butter to the bacon fat and sauté the onion until translucent, about 5 minutes. Add minced garlic and cook for 1 more minute.
  3. Add diced potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  4. Use an immersion blender to puree the soup until smooth, or blend in batches in a blender carefully.
  5. Stir in heavy cream and shredded cheddar cheese until melted and creamy. Season with salt and pepper to taste.
  6. Serve hot, topped with crispy bacon and sliced green onions if desired.

Notes

For extra creaminess, substitute half of the heavy cream with sour cream or add a dollop of crème fraîche when serving.
