Irish Cream Cheesecake Bars

Delightfully creamy and infused with rich Irish cream flavors, these cheesecake bars offer a perfect balance of smooth texture and a hint of liqueur in every bite.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz (450g) cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/4 cup Irish cream liqueur
  • 1 tsp vanilla extract
  • 1/2 cup sour cream

Instructions

  1. Preheat oven to 325°F (160°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the bottom of the prepared pan to form the crust.
  3. Bake the crust for 10 minutes, then remove from oven and allow to cool slightly.
  4. In a large mixing bowl, beat the cream cheese and 3/4 cup sugar together until smooth and creamy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Beat in Irish cream liqueur and vanilla extract until fully incorporated.
  7. Fold in the sour cream gently until mixture is smooth.
  8. Pour the cheesecake filling over the baked crust and spread evenly.
  9. Bake for 35-40 minutes, until the edges are set but the center still slightly jiggles.
  10. Turn off oven, crack the door open, and let cheesecake bars cool inside for 1 hour.
  11. Refrigerate for at least 4 hours or overnight before cutting into bars.

Notes

For an extra touch, garnish with shaved chocolate or a drizzle of caramel sauce before serving to enhance the flavor profile.
