Irish Beef Guinness Pot Pie

This hearty Irish Beef Guinness Pot Pie combines tender beef braised in rich Guinness stout with vegetables, all baked beneath a flaky golden crust for a comforting and flavorful meal.

  • 2 lbs beef chuck, cut into 1-inch cubes
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 tbsp tomato paste
  • 12 oz Guinness stout
  • 1 cup beef broth
  • 2 tsp fresh thyme leaves
  • 2 bay leaves
  • 3 tbsp all-purpose flour
  • 1/4 cup fresh parsley, chopped
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the beef cubes with salt and pepper.
  3. Heat olive oil in a large Dutch oven over medium-high heat. Brown the beef in batches until evenly seared. Remove and set aside.
  4. Add onions, carrots, and celery to the pot and sauté until softened, about 5 minutes.
  5. Stir in garlic and tomato paste, cooking for 1 minute until fragrant.
  6. Sprinkle flour over the vegetables and stir to combine, cooking for another 2 minutes.
  7. Slowly pour in Guinness and beef broth while stirring to avoid lumps.
  8. Return the beef to the pot, add thyme and bay leaves, and bring to a simmer.
  9. Cover and cook on low heat for 2 hours, or until beef is tender and sauce has thickened.
  10. Remove bay leaves and stir in fresh parsley.
  11. Transfer the beef mixture to a pie dish.
  12. Roll out puff pastry sheet to cover the top of the dish and trim the edges.
  13. Brush the pastry with beaten egg.
  14. Bake for 30–35 minutes or until pastry is golden brown and puffed.
  15. Let rest for 10 minutes before serving.

Notes

Serve with creamy mashed potatoes or steamed green vegetables for a complete traditional Irish meal.
