Instant Pot Chicken Noodle Soup

This comforting Instant Pot Chicken Noodle Soup is a quick and hearty meal, featuring tender chicken, flavorful broth, and perfectly cooked noodles.

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 8 cups chicken broth
  • 2 boneless, skinless chicken breasts
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper, to taste
  • 6 ounces egg noodles
  • Juice of 1/2 lemon (optional)

Instructions

  1. Set the Instant Pot to sauté mode and heat olive oil. Add onions and garlic; cook until softened, about 3 minutes.
  2. Add carrots, celery, chicken broth, chicken breasts, thyme, parsley, salt, and pepper. Stir to combine.
  3. Close the lid and set the valve to sealing. Cook on high pressure for 10 minutes.
  4. Quick release the pressure carefully once cooking is complete.
  5. Remove chicken breasts and shred them with two forks.
  6. Turn Instant Pot back to sauté mode and add egg noodles. Cook for 5-7 minutes until noodles are tender.
  7. Return shredded chicken to the pot and stir well. Adjust seasoning and add lemon juice if desired.
  8. Serve hot and enjoy your comforting chicken noodle soup!

Notes

For extra flavor, garnish with fresh parsley or a dash of grated Parmesan cheese before serving.
