Instant Pot Butter Chicken

Creamy, flavorful Instant Pot Butter Chicken made with tender chicken simmered in a rich tomato and butter sauce, perfect for a quick and comforting meal.

  • 1.5 lbs boneless skinless chicken thighs, cut into chunks
  • 3 tbsp butter
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 cup tomato puree
  • 1/2 cup heavy cream
  • 2 tsp garam masala
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp chili powder (adjust to taste)
  • Salt to taste
  • 1/2 cup water
  • 1 tbsp vegetable oil
  • Fresh cilantro leaves for garnish

Instructions

  1. Set the Instant Pot to sauté mode and add the vegetable oil and 1 tbsp butter.
  2. Add chopped onions and sauté until translucent, about 3-4 minutes.
  3. Stir in garlic and ginger; cook for another 1 minute until fragrant.
  4. Add turmeric, cumin, coriander, chili powder, and garam masala; cook spices for 30 seconds to release aroma.
  5. Add chicken pieces and salt; sauté until chicken is browned on all sides, about 5 minutes.
  6. Pour in tomato puree and water, stir to combine and deglaze the bottom.
  7. Seal the Instant Pot lid and set it to pressure cook on high for 8 minutes.
  8. Once cooking is complete, allow the pressure to release naturally for 5 minutes, then quick release remaining pressure.
  9. Open the lid and stir in heavy cream and remaining 2 tbsp butter; simmer on sauté mode for 3-5 minutes to thicken sauce.
  10. Garnish with fresh cilantro and serve hot with rice or naan.

Notes

For extra richness, add a spoonful of cashew paste or use full-fat cream. Pair with basmati rice or warm naan for a complete meal.
