  • 4 boneless, skinless chicken breasts
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 pound baby potatoes, halved
  • 1 red bell pepper, sliced
  • 1 small red onion, sliced
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. In a small bowl, whisk together the Dijon mustard, honey, olive oil, apple cider vinegar, minced garlic, dried thyme, salt, and black pepper until well combined.
  3. Place the chicken breasts in the center of the prepared sheet pan.
  4. Arrange the halved baby potatoes, sliced red bell pepper, and red onion around the chicken.
  5. Brush the honey mustard mixture generously over the chicken breasts and vegetables, reserving a small amount for later.
  6. Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender.
  7. In the last 5 minutes of baking, brush the reserved honey mustard glaze over the chicken again for extra flavor and gloss.
  8. Remove from the oven and let rest for 5 minutes. Garnish with fresh chopped parsley before serving.

Notes

For a complete meal, serve this with a side of steamed green beans or a fresh garden salad. Leftover chicken can be shredded for sandwiches or salads.
