Homemade Chicken Noodle Soup

This comforting homemade chicken noodle soup features tender chicken, hearty noodles, and fresh vegetables in a flavorful broth, perfect for any day.

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté until softened, about 3 minutes.
  2. Add carrots and celery; cook for another 5 minutes until vegetables begin to soften.
  3. Pour in chicken broth and bring to a boil.
  4. Add shredded chicken, dried thyme, salt, and pepper. Reduce heat and simmer for 10 minutes.
  5. Stir in egg noodles and cook until tender, about 7-8 minutes.
  6. Remove from heat and stir in fresh parsley.
  7. Adjust seasoning as needed and serve hot.

Notes

For extra flavor, use homemade chicken broth and garnish with a squeeze of lemon juice or a sprinkle of grated Parmesan cheese.
