  • 2 cups cooked brown rice
  • 1 lb boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup steamed broccoli florets
  • 1 cup roasted sweet potatoes, diced
  • ½ cup shredded carrots
  • ¼ cup chopped fresh parsley
  • ¼ cup hummus (optional, for serving)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, combine paprika, garlic powder, salt, and black pepper.
  3. Rub the spice mixture over the chicken breasts.
  4. Heat olive oil in a skillet over medium-high heat and sear chicken breasts 2-3 minutes per side until browned.
  5. Transfer chicken to a baking dish and bake for 15-20 minutes until fully cooked.
  6. While chicken bakes, steam broccoli and roast diced sweet potatoes until tender.
  7. Slice the cooked chicken breasts into strips.
  8. Divide brown rice, chicken, broccoli, sweet potatoes, and shredded carrots evenly into 4 meal prep containers.
  9. Garnish with fresh parsley and add a dollop of hummus if desired.
  10. Store in airtight containers and refrigerate for up to 4 days.

Notes

For extra flavor, drizzle with a squeeze of fresh lemon juice or add a sprinkle of feta cheese before serving.
