  • 6 large eggs
  • 1/4 cup milk
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped spinach
  • 1/4 cup diced onion
  • 1/2 cup shredded low-fat cheddar cheese
  • 1/4 cup cooked turkey sausage, crumbled
  • Salt and pepper to taste
  • Cooking spray or olive oil for greasing muffin tin

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 12-cup muffin tin.
  2. In a large bowl, whisk together the eggs and milk until fully combined.
  3. Add diced bell peppers, chopped spinach, diced onion, cooked turkey sausage, shredded cheese, salt, and pepper to the egg mixture and stir well.
  4. Pour the mixture evenly into the prepared muffin cups, filling each about 3/4 full.
  5. Bake for 18-22 minutes, or until the egg muffins are set and a toothpick inserted comes out clean.
  6. Allow muffins to cool slightly before removing them from the tin. Serve warm or store in the refrigerator for up to 4 days.

Notes

For extra flavor, sprinkle some chopped fresh herbs like parsley or chives on top before baking. These muffins are great served with a side of fresh fruit or whole grain toast.
