Herb Roasted Leg of Lamb with Garlic

A succulent herb roasted leg of lamb infused with garlic and fresh herbs, perfect for an elegant dinner or special occasion.

  • 1 leg of lamb (about 5 pounds)
  • 6 cloves garlic, sliced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1/4 cup olive oil
  • 1 tablespoon Dijon mustard
  • Salt and freshly ground black pepper, to taste
  • 1 lemon, juiced
  • 1/2 cup dry white wine or chicken broth (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Make small incisions all over the lamb and insert garlic slices into the slits.
  3. In a small bowl, combine olive oil, rosemary, thyme, Dijon mustard, lemon juice, salt, and pepper.
  4. Rub the herb mixture evenly all over the lamb, coating it thoroughly.
  5. Place the lamb on a rack in a roasting pan. Pour the wine or broth into the pan if using.
  6. Roast the lamb for 15 minutes at 400°F, then reduce the heat to 350°F (175°C) and continue roasting for about 1 hour and 15 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  7. Remove the lamb from the oven, tent with foil, and let it rest for 15 minutes before carving.

Notes

For extra flavor, let the lamb marinate with the herb mixture overnight in the refrigerator before roasting.
