Guinness Chocolate Cake

  • 1 cup Guinness stout
  • 250g unsalted butter
  • 75g unsweetened cocoa powder
  • 400g granulated sugar
  • 140g sour cream
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 275g all-purpose flour
  • 2 ½ teaspoons baking soda
  • ½ teaspoon salt
  • For the frosting:
    300g cream cheese, softened
    150g unsalted butter, softened
    400g powdered sugar, sifted
    1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 175°C (350°F). Grease and line two 9-inch round cake pans.
  2. In a saucepan, combine Guinness stout, butter, and cocoa powder. Heat gently until the butter melts, stirring until smooth. Remove from heat and let cool.
  3. In a large bowl, whisk together sugar, sour cream, eggs, and vanilla extract.
  4. Stir the cooled Guinness mixture into the sugar mixture.
  5. Sift together flour, baking soda, and salt. Gradually fold into the wet ingredients until just combined.
  6. Divide the batter evenly between the prepared pans and bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow cakes to cool in pans for 10 minutes then transfer to wire racks to cool completely.
  8. To make the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, beating until fluffy.
  9. Once cakes are completely cool, spread the frosting on one layer, top with the second layer, and frost the top and sides of the cake.
  10. Chill the cake for at least 30 minutes before serving to set the frosting.

Notes

For an extra indulgent touch, garnish the cake with chocolate shavings or a dusting of cocoa powder before serving.
