Guinness Beef Stew with Crusty Bread

This hearty Guinness Beef Stew combines tender chunks of beef simmered in rich Guinness beer with vegetables, served perfectly alongside warm, crusty bread for a comforting meal.

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 2 tablespoons tomato paste
  • 1 bottle (11.2 oz) Guinness stout
  • 4 cups beef broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • 3 tablespoons all-purpose flour
  • Fresh parsley, chopped (for garnish)
  • Crusty bread, for serving

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season beef cubes with salt and pepper, then brown them in batches until all sides are seared. Remove and set aside.
  2. In the same pot, add onions, carrots, and celery. Sauté until softened, about 5 minutes. Add garlic and tomato paste; cook for another 2 minutes.
  3. Return the beef to the pot. Sprinkle the flour over the meat and vegetables, stirring to coat evenly.
  4. Pour in the Guinness stout and beef broth slowly, stirring to combine and scrape any browned bits from the bottom.
  5. Add bay leaves and thyme. Bring stew to a boil, then reduce heat to low and simmer covered for 2 to 2.5 hours, or until beef is tender.
  6. Adjust seasoning with salt and pepper to taste. Remove bay leaves.
  7. Serve the stew hot, garnished with chopped parsley, accompanied by warm crusty bread.

Notes

For extra depth, marinate the beef in Guinness and herbs overnight before cooking, or add a splash of Worcestershire sauce for enhanced flavor.
