  • 1/4 cup granulated sugar
  • 2 1/4 tsp active dry yeast
  • 1 tsp salt
  • 1 cup warm milk (110°F)
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup spinach puree (for natural green coloring)
  • 1 cup brown sugar, packed
  • 2 tbsp ground cinnamon
  • 1/4 cup unsalted butter, softened (for filling)
  • 1 cup cream cheese, softened (for frosting)
  • 1/4 cup unsalted butter, softened (for frosting)
  • 1 1/2 cups powdered sugar (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • Pinch of salt

Instructions

  1. In a large bowl, combine warm milk, yeast, and 1 tbsp sugar; let sit 5-10 minutes until foamy.
  2. Add melted butter, eggs, spinach puree, remaining sugar, and salt; mix well.
  3. Gradually add flour to form a soft dough; knead for 8-10 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover with cloth, and let rise until doubled, about 1 hour.
  5. Prepare filling by mixing brown sugar and cinnamon; set aside.
  6. Roll dough out on a floured surface into a 16×12-inch rectangle.
  7. Spread softened butter evenly over the dough, then sprinkle cinnamon sugar mixture on top.
  8. Roll dough tightly from the long side and cut into 12 equal rolls.
  9. Place rolls in a greased baking dish, cover, and allow to rise for another 30-45 minutes.
  10. Preheat oven to 350°F (175°C) and bake rolls for 25-30 minutes until golden brown.
  11. While rolls bake, prepare frosting by beating cream cheese, butter, powdered sugar, vanilla, and salt until smooth.
  12. Let rolls cool slightly before spreading frosting generously on top.
