Green Velvet Cake with Cream Cheese Frosting

  • 1 ½ cups granulated sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 ½ cups vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tablespoons green food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a large bowl, sift together flour, sugar, baking soda, salt, and cocoa powder.
  3. In another bowl, whisk together vegetable oil, buttermilk, eggs, green food coloring, vanilla extract, and vinegar until well combined.
  4. Slowly add the wet ingredients to the dry ingredients, mixing until smooth and fully incorporated.
  5. Divide the batter evenly among the prepared pans and smooth the tops.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow cakes to cool in pans for 10 minutes, then remove and cool completely on wire racks.
  8. To make the frosting, beat cream cheese and butter together until creamy. Gradually add powdered sugar and vanilla extract, beating until smooth and fluffy.
  9. Frost the cooled cakes by layering and spreading the cream cheese frosting between each layer and on top and sides.
  10. Chill for 30 minutes before serving to set the frosting.

Notes

For an extra flavor boost, sprinkle chopped toasted pecans between the layers or on top of the frosting.
