Green Shamrock Pancakes

Celebrate St. Patrick’s Day with these vibrant Green Shamrock Pancakes, fluffy and perfectly infused with natural spinach for a festive twist.

  • 1 1/2 cups all-purpose flour
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tbsp melted butter
  • 1/2 cup fresh spinach leaves, blended into a puree
  • Green food coloring (optional, for extra color)
  • Butter or oil for cooking

Instructions

  1. In a large bowl, sift together the flour, baking powder, salt, and sugar.
  2. In another bowl, whisk the milk, egg, and melted butter together.
  3. Add the spinach puree to the wet ingredients and mix well. Add a few drops of green food coloring if desired for a brighter color.
  4. Pour the wet mixture into the dry ingredients and stir just until combined. Do not overmix.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  6. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
  7. Flip carefully and cook for another 2 minutes until golden and cooked through.
  8. Serve warm with maple syrup, whipped cream, or your favorite toppings.

Notes

For a nutty flavor, try adding a teaspoon of finely chopped pistachios or serve with a drizzle of Irish cream syrup for an indulgent touch.
