  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 ½ cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional)
  • 3 to 4 tablespoons buttermilk
  • Colorful royal icing or colored sugar for decorating

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
  3. In a large bowl, cream together softened butter and sugar until smooth.
  4. Beat in egg, vanilla extract, and almond extract.
  5. Gradually blend in the dry ingredients. Add buttermilk one tablespoon at a time to moisten the dough; it should be soft but not sticky.
  6. Roll out dough on a floured surface to about ¼-inch thickness. Cut into graduation-themed shapes using cookie cutters.
  7. Place cookies 1 inch apart on prepared baking sheets.
  8. Bake 8 to 10 minutes or until edges are lightly golden.
  9. Let cookies cool on baking sheet for 2 minutes before transferring to wire racks to cool completely.
  10. Decorate with royal icing or colored sugar as desired once completely cooled.

Notes

For best results, chill the dough for at least 30 minutes before rolling out to prevent spreading. Customize by adding edible glitter or personalized messages with icing.
