Gluten-Free Corn Casserole

This gluten-free corn casserole is a creamy, cheesy side dish perfect for any meal, combining sweet corn with a golden, bubbly topping.

  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (14.75 oz) creamed corn
  • 1 cup gluten-free cornmeal
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 large eggs
  • 1/4 cup melted butter
  • 1/4 cup milk
  • 1 teaspoon baking powder (gluten-free)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×9 inch baking dish.
  2. In a large bowl, combine whole kernel corn, creamed corn, sour cream, melted butter, eggs, and milk. Mix until well blended.
  3. Add cornmeal, baking powder, salt, and pepper to the mixture and stir until just combined.
  4. Pour half of the corn mixture into the prepared baking dish.
  5. Sprinkle half of the shredded cheddar cheese over the corn layer.
  6. Pour the remaining corn mixture over the cheese layer, spreading evenly.
  7. Top with the remaining cheddar cheese.
  8. Bake for 45-50 minutes or until the casserole is set and the top is golden and bubbly.
  9. Let it cool for 5 minutes before serving.

Notes

For added flavor, garnish with chopped fresh chives or jalapeños before serving.
