These Freezer-Friendly Breakfast Burritos are a convenient and delicious way to enjoy a hearty morning meal on busy days, packed with eggs, sausage, cheese, and veggies wrapped in a soft tortilla.

  • 6 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked breakfast sausage, crumbled
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 cup shredded cheddar cheese
  • 6 large flour tortillas
  • Optional: salsa, sour cream, chopped cilantro for serving

Instructions

  1. In a medium bowl, whisk together eggs, milk, salt, and pepper.
  2. Heat a large skillet over medium heat and sauté bell peppers and onions until softened, about 3-4 minutes.
  3. Add the cooked sausage to the skillet and heat through.
  4. Pour egg mixture into the skillet and scramble gently until eggs are fully cooked, about 3-5 minutes.
  5. Remove from heat and stir in shredded cheese until melted.
  6. Warm the flour tortillas slightly to make them more pliable.
  7. Divide the egg mixture evenly among the tortillas, placing it in the center of each.
  8. Fold in the sides and roll up each tortilla tightly to form a burrito.
  9. Wrap each burrito individually in aluminum foil or plastic wrap and freeze.
  10. To reheat, unwrap and microwave on high for 2-3 minutes or until heated through, or bake in a 350°F oven for 15-20 minutes.

Notes

For added flavor, try adding diced avocado or a splash of hot sauce when serving. These burritos also freeze well for up to 3 months.
