Chicken Romano

Chicken Romano is a flavorful Italian-inspired dish featuring crispy, pecorino-crusted chicken breasts served with a zesty lemon garlic sauce. Perfect for an elegant yet easy weeknight dinner.

  • 2 boneless, skinless chicken breasts
  • 1 cup grated Romano cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • 1/4 cup dry white wine (optional)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place the chicken breasts between two sheets of plastic wrap and pound to an even thickness about 1/2 inch thick.
  2. Set up three shallow dishes: one with flour seasoned with salt and pepper, one with beaten eggs, and one with a mixture of breadcrumbs and grated Romano cheese.
  3. Dip each chicken breast first into the flour, shaking off excess, then into the egg, and finally coat thoroughly with the breadcrumb-Romano mixture.
  4. Heat olive oil in a large skillet over medium heat. Add the chicken and cook until golden brown and cooked through, about 4-5 minutes per side. Remove and keep warm.
  5. In the same skillet, add minced garlic and sauté for 30 seconds until fragrant. Pour in lemon juice and white wine, scraping up any browned bits from the pan. Let sauce simmer for 2-3 minutes until slightly reduced.
  6. Return chicken to the skillet and spoon the sauce over it. Cook for an additional minute to blend flavors.
  7. Garnish with chopped parsley and serve immediately.

Notes

For extra flavor, add a sprinkle of crushed red pepper flakes to the breadcrumb mixture, or serve with a side of roasted vegetables or a fresh green salad.
