This Easter No Bake Jello Pie is a vibrant, refreshing dessert combining fruity gelatin with a creamy filling and a crunchy crust, perfect for spring celebrations.

  • 1 package (3 oz) lemon or lime Jello gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 1 cup cold crushed pineapple, drained
  • 1 cup whipped topping (such as Cool Whip), thawed
  • 8 oz cream cheese, softened
  • 1 graham cracker crust (9 inch)
  • Optional: pastel-colored sprinkles or Easter candy for garnish

Instructions

  1. In a bowl, dissolve the gelatin in boiling water. Stir well until completely dissolved.
  2. Add the cold water and stir again. Refrigerate the mixture for about 30 minutes or until it begins to thicken but is not fully set.
  3. In a separate bowl, beat the softened cream cheese until smooth. Gradually add the softened whipped topping and mix until creamy and combined.
  4. Stir the crushed pineapple into the thickened gelatin, then gently fold in the cream cheese mixture.
  5. Pour the mixture into the graham cracker crust and smooth the top.
  6. Refrigerate the pie for at least 3 hours or until firm.
  7. Before serving, garnish with pastel-colored sprinkles or Easter-themed candy if desired.
