Easter Egg Macarons

Delight in these colorful Easter Egg Macarons—delicate, crisp shells with a creamy filling, perfect for celebrating springtime with a festive treat.

  • 110g almond flour
  • 200g powdered sugar
  • 100g egg whites (about 3 large eggs), aged
  • 50g granulated sugar
  • Gel food coloring (various pastel colors)
  • 200g white chocolate, chopped
  • 120ml heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Sift almond flour and powdered sugar together into a bowl to ensure a fine texture.
  2. In a clean bowl, whisk egg whites until foamy, then gradually add granulated sugar and continue to beat until stiff, glossy peaks form.
  3. Divide meringue into separate bowls and gently fold in food coloring to create pastel colors.
  4. Carefully fold the almond flour mixture into the meringue until the batter flows like lava but isn’t runny.
  5. Transfer batter to piping bags and pipe small egg-shaped rounds onto parchment-lined baking sheets.
  6. Tap the baking sheets firmly on the counter to release air bubbles and let them rest for 30-60 minutes until a skin forms.
  7. Preheat oven to 150°C (300°F) and bake macarons for 14-16 minutes until set.
  8. Allow macarons to cool completely before removing from baking sheets.
  9. For the filling, heat heavy cream until gently simmering, then pour over chopped white chocolate and stir until smooth.
  10. Add vanilla extract to the ganache, chill until thickened, then pipe onto half of the macaron shells and sandwich with the others.
  11. Refrigerate assembled macarons for at least 24 hours to develop flavor before serving.
