  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 ½ cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 3 to 4 tablespoons buttermilk
  • Yellow, orange, and black royal icing for decorating

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a small bowl, stir together flour, baking soda, and baking powder.
  3. In a large bowl, cream together the butter and sugar until smooth.
  4. Beat in the egg, vanilla extract, and almond extract.
  5. Gradually blend in the dry ingredients, adding buttermilk one tablespoon at a time until dough is soft but not sticky.
  6. Roll out dough on a floured surface to ¼ inch thickness.
  7. Use chick-shaped cookie cutters to cut out shapes and place on prepared baking sheets.
  8. Bake 8 to 10 minutes or until edges are lightly golden.
  9. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  10. Decorate cooled cookies with royal icing to create the Easter chick look using yellow for the body, orange for the beak and feet, and black for eyes and details.

Notes

For best results, let the decorated cookies dry overnight before storing to prevent smudging. These cookies also pair beautifully with a cup of tea or lemonade during spring gatherings.
