  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • ½ cup whole milk
  • 1 ½ cups powdered sugar
  • ⅓ cup unsalted butter, softened (for frosting)
  • 2 tbsp heavy cream
  • Pink and white fondant for ears
  • Mini chocolate chips for eyes and nose

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with 12 liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream the butter and granulated sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. Alternately add dry ingredients and milk, beginning and ending with dry ingredients. Mix until just combined.
  6. Divide batter evenly into cupcake liners and bake for 18–20 minutes or until a toothpick comes out clean.
  7. Let cupcakes cool completely on a wire rack.
  8. For the frosting, beat butter until creamy, gradually add powdered sugar, then mix in heavy cream until smooth.
  9. Frost each cupcake generously.
  10. Shape bunny ears from fondant and press into the top of each cupcake.
  11. Place mini chocolate chips to form eyes and a nose on each bunny face.

For a fun variation, use colored frosting to match your Easter theme or add edible glitter for extra sparkle.
