Dairy-Free Olive Oil Base Shrimp Scampi

This dairy-free shrimp scampi features succulent shrimp sautéed in a fragrant olive oil, garlic, and lemon sauce, perfect for a light and flavorful dinner.

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine or vegetable broth
  • Juice of 1 lemon
  • 1/4 cup fresh parsley, chopped
  • Salt and freshly ground black pepper, to taste
  • Cooked pasta or zucchini noodles, for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and red pepper flakes; sauté for about 1 minute until fragrant but not browned.
  3. Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and opaque.
  4. Pour in the white wine (or vegetable broth) and lemon juice, stirring to combine. Let the sauce simmer for 2-3 minutes to reduce slightly.
  5. Season with salt and pepper to taste.
  6. Remove from heat and stir in chopped parsley.
  7. Serve immediately over cooked pasta or zucchini noodles.

Notes

For added depth, garnish with lemon zest or a sprinkle of chili flakes. Serve with crusty bread to soak up the flavorful sauce.
