  • 2 lbs fresh spinach, washed and trimmed
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese
  • 1/2 cup finely chopped onion
  • 3 cloves garlic, minced
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp ground nutmeg

Instructions

  1. Place the spinach in the crockpot; it will wilt down as it cooks.
  2. In a skillet, melt the butter over medium heat. Add the chopped onion and garlic, sauté until translucent, about 3-4 minutes.
  3. Whisk in the flour and cook for 1-2 minutes to form a roux.
  4. Slowly add the heavy cream while whisking to avoid lumps; cook until the sauce thickens, about 3-5 minutes.
  5. Stir in the cream cheese until smooth, then add Parmesan cheese, salt, pepper, and nutmeg. Mix well.
  6. Pour the creamy sauce over the spinach in the crockpot and gently stir to combine.
  7. Cover and cook on low for 2-3 hours, stirring halfway through, until the spinach is tender and the sauce is bubbly.
  8. Serve warm as a delicious side dish.

Notes

For an extra touch of flavor, sprinkle crispy bacon bits on top before serving or use half-and-half instead of heavy cream for a lighter version.
