This Crock Pot White Chicken Chili is a creamy, comforting, and protein-packed slow cooker meal perfect for chilly days. It blends tender chicken, white beans, and green chilies for a flavorful twist on classic chili.

  • 2 boneless, skinless chicken breasts
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup sour cream
  • 1/2 cup shredded Monterey Jack cheese
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Place the chicken breasts at the bottom of the crock pot.
  2. Add the white beans, diced green chilies, chopped onion, and minced garlic on top.
  3. Pour in the chicken broth and stir in cumin, oregano, chili powder, salt, and black pepper.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is fully cooked and tender.
  5. Remove the chicken breasts and shred using two forks; return shredded chicken to the crock pot.
  6. Stir in the sour cream and Monterey Jack cheese until melted and combined.
  7. Garnish with chopped fresh cilantro before serving, if desired.

Notes

For extra heat, add a diced jalapeño or a dash of cayenne pepper. Serve with tortilla chips or over rice for a heartier meal.
