Crock Pot Street Tacos

Deliciously tender and flavorful Crock Pot Street Tacos made with slow-cooked meat, fresh toppings, and warm tortillas. Perfect for a quick and easy Mexican-inspired meal.

  • 2 lbs beef chuck roast or pork shoulder
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup beef broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8-10 small corn tortillas
  • 1/2 cup chopped fresh cilantro
  • 1 lime, cut into wedges
  • 1/2 cup diced white onion
  • Salsa or hot sauce, optional

Instructions

  1. Place the beef chuck roast or pork shoulder in the crock pot.
  2. In a small bowl, mix together chili powder, cumin, smoked paprika, oregano, salt, and black pepper.
  3. Sprinkle the seasoning mixture over the meat, then add the chopped onion, minced garlic, and beef broth to the crock pot.
  4. Cover and cook on low for 8 hours or until the meat is tender and easily shreddable.
  5. Remove the meat from the crock pot and shred using two forks.
  6. Return the shredded meat to the crock pot and mix with the juices to keep it moist.
  7. Warm the corn tortillas in a skillet or microwave.
  8. Assemble tacos by placing shredded meat on tortillas, then topping with diced onions, chopped cilantro, and a squeeze of lime.
  9. Add salsa or hot sauce as desired, then serve immediately.

Notes

For extra flavor, try topping your tacos with crumbled queso fresco or pickled jalapeños. You can also use chicken or carnitas as an alternative to beef or pork.
