Crock Pot Corned Beef

Slow-cooked in a crock pot, this Corned Beef recipe yields tender, flavorful meat perfect for a comforting meal with cabbage and potatoes.

  • 3-4 lb corned beef brisket with spice packet
  • 4 cups beef broth
  • 1 medium onion, quartered
  • 4 cloves garlic, smashed
  • 4 large carrots, peeled and cut into chunks
  • 6 red potatoes, halved
  • 1 small head green cabbage, cut into wedges
  • 2 bay leaves
  • 1 tsp black peppercorns

Instructions

  1. Place the corned beef brisket in the crock pot, fat side up.
  2. Sprinkle the spice packet over the meat.
  3. Add beef broth, onion, garlic, bay leaves, and peppercorns to the crock pot.
  4. Cover and cook on low for 8-10 hours or on high for 4-5 hours until the brisket is tender.
  5. Add carrots and potatoes to the crock pot during the last 2 hours of cooking.
  6. In the last 30 minutes, add cabbage wedges on top and cover again.
  7. Once done, remove the meat and let it rest for 10 minutes before slicing against the grain.
  8. Serve with the cooked vegetables and some of the cooking liquid spooned over.

Notes

For best flavor, let the corned beef rest before slicing and pair it with mustard or horseradish sauce.
