  • 1 medium green cabbage
  • 3 tablespoons olive oil
  • 4 tablespoons unsalted butter, melted
  • 3 garlic cloves, minced
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon smoked paprika (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Remove outer leaves from the cabbage and trim the core slightly to help steaks hold together.
  3. Cut the cabbage into 1-inch thick slices to form ‘steaks’.
  4. Boil or steam cabbage steaks for 5 minutes to soften slightly, then drain well and pat dry.
  5. Place the cabbage steaks on the prepared baking sheet and use a flat spatula or the bottom of a glass to gently press down, flattening them slightly.
  6. Brush both sides of the cabbage steaks with olive oil and season with salt, pepper, and smoked paprika if using.
  7. Roast in the oven for 20-25 minutes, flipping halfway, until edges are crispy and browned.
  8. Meanwhile, mix melted butter with minced garlic.
  9. Once roasted, brush the garlic butter over the cabbage steaks and garnish with fresh parsley before serving.

Notes

For extra flavor, sprinkle grated Parmesan cheese over the steaks in the last 5 minutes of roasting or add a squeeze of lemon juice before serving.
