  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups chicken or vegetable broth
  • 2 cups whole milk
  • 2 cups shredded sharp cheddar cheese
  • Salt and black pepper to taste
  • 1/4 teaspoon nutmeg (optional)

Instructions

  1. In a large pot, melt the butter over medium heat. Add the diced onion and cook until translucent, about 4 minutes.
  2. Add the minced garlic and cook for another 1 minute until fragrant.
  3. Stir in the flour and cook for 2 minutes to form a roux, stirring constantly.
  4. Gradually whisk in the broth and milk, ensuring no lumps form.
  5. Bring the mixture to a simmer and add the broccoli florets. Cook until broccoli is tender, about 10 minutes.
  6. Using an immersion blender, blend the soup slightly to your desired consistency, leaving some broccoli pieces for texture.
  7. Reduce heat to low and stir in the shredded cheddar cheese until melted and smooth.
  8. Season with salt, pepper, and nutmeg if using. Serve hot.
