Creamy Asparagus Soup

A velvety and nutritious creamy asparagus soup that highlights fresh asparagus with a smooth, rich texture perfect for a light lunch or elegant starter.

  • 1 lb fresh asparagus, trimmed and chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh lemon juice (optional)

Instructions

  1. In a large pot, heat olive oil and butter over medium heat until melted.
  2. Add chopped onion and minced garlic; sauté until softened and translucent, about 5 minutes.
  3. Add chopped asparagus to the pot and cook for another 3-4 minutes.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until asparagus is tender, about 15 minutes.
  5. Using an immersion blender or regular blender, puree the soup until smooth.
  6. Return the soup to the pot and stir in heavy cream. Heat gently but do not boil.
  7. Season with salt, pepper, and a splash of fresh lemon juice if desired.
  8. Serve warm, garnished with asparagus tips or a drizzle of cream.

Notes

For a dairy-free version, substitute heavy cream with coconut milk or cashew cream. Garnish with fresh herbs like chives or parsley for extra flavor.
