Creamy Asparagus Pasta

This creamy asparagus pasta is a deliciously smooth and flavorful Italian-inspired dish, perfect for a quick springtime meal featuring fresh asparagus and a rich, velvety sauce.

  • 8 oz fettuccine pasta
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon lemon juice
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Fresh parsley, chopped for garnish

Instructions

  1. Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the asparagus pieces to the skillet and cook for 4-5 minutes, until tender-crisp.
  4. Reduce heat to low and pour in the heavy cream. Stir well to combine.
  5. Add the grated Parmesan cheese and stir until the sauce thickens slightly and cheese is melted.
  6. Season the sauce with salt, pepper, lemon juice, and crushed red pepper flakes if using. Stir to combine.
  7. Add the cooked pasta to the skillet and toss to coat evenly with the creamy asparagus sauce.
  8. Remove from heat and garnish with chopped fresh parsley before serving.

Notes

For a lighter version, substitute the heavy cream with half-and-half or Greek yogurt. Adding toasted pine nuts on top adds a delightful crunch.
