Freshly Prepared Cowboy Butter Lemon Bowtie Chicken with Broccoli

A zesty and flavorful Cowboy Butter Lemon Bowtie Chicken served with tender broccoli makes a quick and wholesome dinner perfect for any weeknight.

  • 8 oz bowtie pasta
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 4 tablespoons cowboy butter sauce (butter, garlic, lemon zest, parsley, paprika, cayenne)
  • 1 lemon, juiced
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped for garnish

Instructions

  1. Cook the bowtie pasta according to package instructions until al dente; add broccoli florets in the last 3 minutes of cooking. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Season chicken breasts with salt and pepper.
  3. Cook chicken breasts in the skillet for 6-7 minutes per side or until fully cooked and golden brown. Remove from skillet and keep warm.
  4. In the same skillet, reduce heat to medium, add minced garlic and sauté for 1 minute until fragrant.
  5. Add cowboy butter sauce and lemon juice to the skillet, stirring to combine and heat through.
  6. Return the chicken to the skillet and spoon sauce over the top to coat.
  7. Toss the cooked pasta and broccoli with the sauce in the skillet until well combined.
  8. Plate the pasta and broccoli mixture, top with the chicken breasts, sprinkle with Parmesan cheese and fresh parsley before serving.

Notes

For extra flavor, marinate the chicken in some cowboy butter and lemon juice for 30 minutes before cooking.
