Cottage Cheese Stuffed Peppers

These Cottage Cheese Stuffed Peppers are a healthy and flavorful dish featuring bell peppers filled with creamy cottage cheese and herbs, perfect as a light lunch or side.

  • 4 large bell peppers (any color)
  • 1 1/2 cups cottage cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds and membranes. Set aside.
  3. In a skillet, heat olive oil over medium heat. Sauté the onion and garlic until translucent, about 3-4 minutes.
  4. In a mixing bowl, combine the sautéed onion and garlic, cottage cheese, parsley, salt, and pepper. Mix well.
  5. Stuff each pepper with the cottage cheese mixture and place them upright in a baking dish.
  6. Sprinkle Parmesan cheese on top of each stuffed pepper if using.
  7. Cover the baking dish with foil and bake for 25 minutes.
  8. Remove foil and bake for an additional 10 minutes until peppers are tender and tops begin to brown.
  9. Remove from oven and let cool slightly before serving.

Notes

For added flavor, try mixing in some chopped sun-dried tomatoes or fresh basil into the stuffing before baking.
