Cottage Cheese Cheesecake

A light and creamy cottage cheese cheesecake that offers a healthier twist on the classic dessert, perfect for a satisfying treat without the heaviness.

  • 2 cups cottage cheese
  • 1 cup cream cheese, softened
  • 3/4 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup graham cracker crumbs
  • 2 tablespoons melted butter

Instructions

  1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. In a small bowl, mix graham cracker crumbs with melted butter and press into the bottom of the pan to form a crust.
  3. In a food processor, blend cottage cheese until smooth.
  4. In a large bowl, beat cream cheese and sugar until creamy and smooth.
  5. Add blended cottage cheese, eggs one at a time, vanilla extract, lemon juice, flour, and salt. Mix until well combined.
  6. Pour filling over the crust in the springform pan.
  7. Bake in the preheated oven for 50–60 minutes, or until the center is almost set but still slightly jiggly.
  8. Turn off oven, leave cheesecake inside with the door slightly open for 1 hour to cool gradually.
  9. Refrigerate for at least 4 hours before serving. Slice and enjoy.

Notes

For best results, serve chilled with fresh berries or a drizzle of honey to enhance the natural flavors.
