Cottage Cheese Alfredo Pasta

A creamy and healthy twist on classic Alfredo pasta made with protein-rich cottage cheese for a smooth, velvety sauce that’s perfect for a quick Italian-inspired dinner.

  • 8 oz fettuccine pasta
  • 1 cup low-fat cottage cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 cup milk (whole or 2%)
  • 2 tbsp olive oil
  • 1/4 tsp ground black pepper
  • Salt to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
  2. In a blender, combine cottage cheese, Parmesan cheese, milk, and minced garlic. Blend until smooth and creamy.
  3. Heat olive oil in a large skillet over medium heat. Pour the blended sauce into the skillet and cook for 2–3 minutes, stirring frequently until warmed through.
  4. Season the sauce with salt and black pepper to taste.
  5. Add the cooked pasta to the skillet and toss gently to coat evenly with the cottage cheese Alfredo sauce.
  6. Cook for an additional 1–2 minutes, allowing the pasta to absorb flavors.
  7. Serve hot, garnished with chopped fresh parsley if desired.

Notes

For extra richness, stir in a tablespoon of butter or a splash of cream. You can also add steamed vegetables like broccoli or sautéed mushrooms to boost nutrition and flavor.
