  • 2 cups cooked corned beef, shredded
  • 2 cups green cabbage, thinly sliced
  • 1/2 cup red cabbage, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: sliced jalapeños for heat
  • Lime wedges for serving

Instructions

  1. In a bowl, combine mayonnaise, lime juice, honey, apple cider vinegar, cumin, salt, and pepper to make the dressing.
  2. In a large bowl, toss the green cabbage, red cabbage, and cilantro with the dressing until well coated. Set aside.
  3. Heat olive oil in a skillet over medium heat. Add shredded corned beef and cook until warmed through and slightly crispy, about 5 minutes.
  4. Warm the corn tortillas in a dry skillet or microwave until soft and pliable.
  5. Assemble the tacos by dividing the corned beef evenly among tortillas, then topping with a generous scoop of cabbage slaw.
  6. Garnish with sliced jalapeños if desired and serve with lime wedges on the side.

Notes

For extra flavor, add pickled red onions or a drizzle of spicy sriracha mayo to the tacos.
