Copycat Popeyes Chicken Sandwich

  • 2 boneless, skinless chicken breasts
  • 1 cup buttermilk
  • 1 tablespoon hot sauce
  • 1 ½ cups all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Vegetable oil for frying
  • 4 brioche sandwich buns
  • 4 tablespoons mayonnaise
  • 8 dill pickle slices

Instructions

  1. In a bowl, combine buttermilk and hot sauce. Add chicken breasts and marinate for at least 1 hour, preferably overnight.
  2. In another bowl, mix flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  3. Remove chicken from marinade, letting excess drip off, then dredge thoroughly in the seasoned flour mixture.
  4. Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
  5. Fry chicken breasts for 6 to 8 minutes on each side until golden brown and cooked through.
  6. Drain fried chicken on paper towels.
  7. Toast brioche buns lightly and spread mayonnaise on the bottom half.
  8. Place the fried chicken on the bun, top with pickle slices, and cover with the top bun.
  9. Serve immediately and enjoy your crispy homemade chicken sandwich.

Notes

For extra heat, add a spicy mayo by mixing mayonnaise with a dash of hot sauce before spreading on the buns.
