Copycat IHOP Stuffed French Toast

  • 8 slices Texas Toast bread
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 cup strawberries, chopped
  • 1/2 cup blueberries
  • 4 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 2 tbsp butter
  • Maple syrup, for serving
  • Powdered sugar, for garnish

Instructions

  1. In a bowl, mix softened cream cheese and powdered sugar until smooth.
  2. Spread cream cheese mixture evenly on 4 slices of bread.
  3. Top cream cheese with chopped strawberries and blueberries, then cover with remaining bread slices to make sandwiches.
  4. In a shallow dish, whisk together eggs, milk, vanilla extract, and cinnamon.
  5. Heat a large skillet over medium heat and melt butter.
  6. Dip each stuffed sandwich into the egg mixture, coating both sides well.
  7. Place sandwiches onto the skillet and cook for 3-4 minutes on each side or until golden brown and cooked through.
  8. Remove from skillet and dust with powdered sugar.
  9. Serve warm with maple syrup drizzled on top.
