Copycat Cracker Barrel Pancakes

These Copycat Cracker Barrel Pancakes are thick, fluffy, and perfectly golden, replicating the beloved classic breakfast with an easy homemade recipe.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, beat the eggs, then whisk in the buttermilk, melted butter, and vanilla extract until combined.
  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined; avoid overmixing to keep pancakes fluffy.
  4. Heat a griddle or skillet over medium heat and lightly grease with butter or oil.
  5. Pour 1/4 cup batter for each pancake onto the griddle and cook until bubbles form on the surface and edges look set, about 2-3 minutes.
  6. Flip carefully and cook the other side until golden brown, another 1-2 minutes.
  7. Serve warm with maple syrup and butter.

Notes

For extra fluffy pancakes, let the batter rest for 5 minutes before cooking and avoid overmixing to prevent toughness.
