Copycat Chili's Chicken Fajitas

  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons olive oil
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper, to taste
  • Juice of 1 lime
  • 8 small flour or corn tortillas
  • Fresh cilantro, chopped (for garnish)
  • Sour cream and shredded cheese (optional, for serving)

Instructions

  1. In a medium bowl, combine chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper, salt, and black pepper.
  2. Add the sliced chicken to the bowl and toss with 1 tablespoon olive oil and half of the spice mixture. Marinate for at least 15 minutes.
  3. Heat remaining olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-6 minutes until browned and cooked through. Remove chicken and set aside.
  4. In the same skillet, add the sliced bell peppers, onion, garlic, and remaining spice mix. Sauté for 4-5 minutes until vegetables are tender-crisp.
  5. Return the chicken to the skillet and stir to combine with the vegetables. Cook for an additional 1-2 minutes, then squeeze lime juice over the mixture.
  6. Warm the tortillas in a dry skillet or microwave.
  7. Serve the chicken and vegetables on warm tortillas. Garnish with fresh cilantro, and add sour cream or shredded cheese if desired.

Notes

For extra flavor, marinate the chicken overnight and serve with guacamole or pico de gallo on the side.
