Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1 cup dill pickle juice
  • 1/2 cup whole milk
  • 1 large egg
  • 1 cup all-purpose flour
  • 2 tablespoons powdered sugar
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil, for frying
  • 4 sandwich buns, toasted
  • 4 slices pepper jack cheese
  • Lettuce leaves
  • 3-4 dill pickle slices per sandwich
  • Mayonnaise or spicy mayo (optional)

Instructions

  1. Place the chicken breasts between two sheets of plastic wrap and pound them to about 1/2 inch thickness.
  2. Marinate the chicken in dill pickle juice for at least 30 minutes, up to 2 hours in the refrigerator.
  3. In a shallow bowl, whisk together the milk and egg.
  4. In another bowl, combine the flour, powdered sugar, paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper.
  5. Heat about 1 inch of vegetable oil in a deep skillet or Dutch oven to 350°F (175°C).
  6. Remove chicken from pickle juice, pat dry, then dip into the milk and egg mixture, followed by dredging in the seasoned flour mixture. For extra crispiness, repeat the milk and flour dredging once more.
  7. Carefully fry the chicken breasts in batches until golden brown and cooked through, about 4-5 minutes per side. Drain on paper towels.
  8. Place a slice of pepper jack cheese on each chicken breast while still hot to allow it to melt slightly.
  9. Assemble the sandwich by spreading mayonnaise or spicy mayo on the toasted bun, adding lettuce, the spicy chicken with melted cheese, and pickle slices. Top with the other half of the bun.
  10. Serve immediately and enjoy your spicy deluxe sandwich!

Notes

For even more heat, add a few dashes of hot sauce to your mayonnaise before spreading it on the bun.
