Homemade cool graduation cake on white plate

Celebrate your graduate with this cool graduation cake featuring rich chocolate layers and a smooth vanilla buttercream, decorated with colorful sprinkles for a festive finish.

  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter, softened (for buttercream)
  • 4 cups powdered sugar (for buttercream)
  • 1/4 cup heavy cream (for buttercream)
  • 1 teaspoon vanilla extract (for buttercream)
  • Assorted colorful sprinkles for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add milk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Beat on medium speed until well combined.
  4. Carefully stir in the boiling water. The batter will be thin; this is normal.
  5. Divide batter evenly between the prepared cake pans.
  6. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow cakes to cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  8. To make the buttercream, beat softened butter until creamy. Gradually add powdered sugar, heavy cream, and vanilla extract. Beat until smooth and fluffy.
  9. Place one cake layer on a serving plate and spread a layer of buttercream on top.
  10. Top with the second cake layer. Frost the top and sides of the cake with remaining buttercream.
  11. Decorate with colorful sprinkles and chill the cake for 30 minutes before serving.

Notes

For an extra festive touch, add edible gold stars or personalize the cake with a congratulatory message using colored icing.
