Confetti Spring Cake

A light and festive Confetti Spring Cake bursting with colorful sprinkles and a delicate vanilla flavor, perfect for celebrating the season.

  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup sour cream
  • 1/4 cup whole milk
  • 1/2 cup rainbow sprinkles (jimmies)
  • Butter and flour for pan

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat the softened butter and sugar together until light and fluffy.
  4. Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
  5. Alternately add the dry ingredients and sour cream to the butter mixture, beginning and ending with dry ingredients; mix until just combined.
  6. Stir in the milk until batter is smooth.
  7. Gently fold in sprinkles, being careful not to overmix to prevent color bleeding.
  8. Pour batter into prepared cake pan and smooth the top.
  9. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow cake to cool in pan for 10 minutes, then transfer to a wire rack to cool completely before frosting or serving.

Notes

For an extra festive touch, frost the cake with vanilla buttercream and sprinkle additional jimmies on top before serving.
