Colcannon (Mashed Potatoes with Cabbage)

Colcannon is a traditional Irish dish featuring creamy mashed potatoes blended with tender cabbage and scallions, perfect as a comforting side or main. This hearty recipe brings a delicious balance of flavors and textures to your table.

  • 2 pounds potatoes, peeled and diced
  • 4 cups cabbage, chopped
  • 4 green onions, sliced
  • 4 tablespoons unsalted butter
  • 1/2 cup whole milk
  • Salt and pepper, to taste

Instructions

  1. Boil the diced potatoes in salted water until tender, about 15 minutes; drain well.
  2. In a separate pan, melt 2 tablespoons butter and sauté the chopped cabbage and green onions until soft, about 5–7 minutes.
  3. Heat the milk gently until warm.
  4. Mash the potatoes with the remaining butter, then gradually stir in the warm milk until creamy.
  5. Fold in the cooked cabbage and green onions; season with salt and pepper to taste.
  6. Serve hot as a comforting side dish.

Notes

For a richer flavor, try adding crispy bacon bits or a sprinkle of nutmeg to the mashed potatoes before serving.
