Classic Noodle Leftover Turkey Soup

A comforting and hearty soup made from leftover turkey, tender noodles, and fresh vegetables, perfect for warming up on chilly days.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 6 cups turkey or chicken broth
  • 3 cups cooked leftover turkey, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and freshly ground black pepper, to taste
  • 2 cups egg noodles
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until softened, about 5 minutes.
  2. Add minced garlic and cook for 1 minute more until fragrant.
  3. Pour in turkey broth and bring to a boil.
  4. Add shredded turkey, thyme, and parsley. Reduce heat to simmer and cook for 10 minutes.
  5. Season with salt and pepper to taste.
  6. Add egg noodles and cook until tender, about 7-8 minutes.
  7. Remove from heat and garnish with fresh parsley before serving.

Notes

For extra flavor, you can add a splash of lemon juice or a pinch of crushed red pepper flakes before serving.
