Classic Layer Chocolate Cake

  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk, room temperature
  • 1/2 cup vegetable oil
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • Chocolate frosting (store-bought or homemade)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk buttermilk, vegetable oil, eggs, and vanilla extract until combined.
  4. Gradually add wet ingredients to the dry ingredients and mix until smooth.
  5. Carefully stir in boiling water; batter will be thin.
  6. Pour batter evenly into the prepared pans.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow cakes to cool in pans for 10 minutes, then remove to wire racks to cool completely.
  9. Once cooled, frost one layer with chocolate frosting, stack the second layer on top, and frost the entire cake evenly.
  10. Chill for 30 minutes before serving for best texture and flavor.

Notes

For extra richness, add a layer of chocolate ganache between cake layers or top with fresh berries for a fruity contrast.
