Classic Carrot Cake with Cream Cheese Frosting

A moist and flavorful carrot cake layered with rich cream cheese frosting, perfect for any celebration or a delightful dessert treat.

  • 2 teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 4 large eggs
  • 1 ½ cups granulated sugar
  • 1 cup vegetable oil
  • 2 cups finely grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts (optional)
  • ½ cup shredded coconut (optional)
  • 1 teaspoon vanilla extract
  • For the frosting:
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, beat the eggs and sugar until light and fluffy.
  4. Slowly add the oil to the egg mixture, mixing well to combine.
  5. Stir in the grated carrots, crushed pineapple, vanilla extract, walnuts, and coconut.
  6. Gradually fold the dry ingredients into the wet ingredients until just combined.
  7. Divide the batter evenly between the prepared pans and smooth the tops.
  8. Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  10. For the frosting, beat cream cheese and butter until smooth and creamy.
  11. Gradually add powdered sugar and vanilla, beating until fluffy.
  12. Spread the cream cheese frosting between the cake layers and over the top and sides of the cake.
  13. Refrigerate for at least 30 minutes before serving for best results.

Notes

For extra flavor, add a pinch of ground ginger to the cake batter or garnish with chopped walnuts on top of the frosting.
